Pectin

Pectin has a very complicated and heterogeneous structure. The biosynthesis of such a complex structure probably requires 50-100 different enzymes. So far only two have been identified and published (Iwai et al. 2002, Harholt et al. 2006). We have identified enzymes involved in making arabinan (Harholt et al. 2006) and xylogalacturonan (Sørensen et al. in preparation).
